Parsley Sauce

Parsley sauce is one of the classic accompaniments for fish. Serve with plain grilled or poached fish.

    3 tbsp butter
    3 tbsp all-purpose flour
    1 1/4 cups milk
    Salt and freshly ground black pepper
    1 tbsp chopped fresh
    parsley

1- Melt the butter in a saucepan and stir in the flour. Cook over a gentle heat for 2 minutes, stirring.

2- Remove from the heat and blend in a little of the milk. Add the rest of the milk, stirring all the time to make sure there are no lumps. Season with salt and pepper.

3- Return to the heat and bring to a boil, stirring. Reduce the heat and simmer gently for 5 minutes, stirring. Add the parsley, stir well and serve immediately.
