4 stalks celery
1- Slice the celery diagonally into pieces about 1/2 in thick 2- Cut the zucchini in half lengthwise and then cut into 1/2 in thick slices 3- Cut the bell pepper into strips and then into 1 in diagonal pieces 4- Heat the oil in a heavy skillet over a medium heat. Add the celery and stir fry until just tender 5- Add the zucchini and pepper and stir fry until all the vegetables are tender but still crisp 6- Add the salt, pepper and oregano or marjoram and cook for a further 30 seconds. Stir in the chives and serve. |
