Stir-Fried Vegetables 
 with Herbs

stir-friedvegetablesThese crisply cooked vegetables flavored with herbs make a perfect side dish. Either serve them hot to accompany a meat dish or cold as a salad.

4 stalks celery
4 medium zucchini
2 red bell peppers, seeded
3-4 tbsp oil
Pinch of salt and pepper
1 tsp fresh oregano or
marjoram, chopped
1/3 cup snipped fresh
chives

 

1- Slice the celery diagonally into pieces about 1/2 in thick

2- Cut the zucchini in half lengthwise and then cut into 1/2 in thick slices

3- Cut the bell pepper into strips and then into 1 in diagonal pieces

4- Heat the oil in a heavy skillet over a medium heat. Add the celery and stir fry until just tender

5- Add the zucchini and pepper and stir fry until all the vegetables are tender but still crisp

6- Add the salt, pepper and oregano or marjoram and cook for a further 30 seconds. Stir in the chives and serve.
