Grape and Bergamot  
 Jellies

These individual jellies only take a few minutes to cook in the microwave. They make a refreshing end to a meal. Decorate them with rosettes of cream, if desired.

    1 cup green grapes
    Scant 2 cups unsweetened white grape juice
    2 tbsp sugar
    1 tbsp powdered gelatin
    2/3 cup water
    4 sprigs of
    bergamot

1- If the grapes are not seedless, cut in half and remove the seeds. Skin the grapes if desired.

2- Put the grape juice, sugar and bergamot in a large bowl and cook on HIGH for 2-4 minutes until the sugar has dissolved, stirring once. Allow to cool slightly, then remove the bergamot.

3- Mix the gelatin with 4 tbsp of the water. Cook on HIGH for 30 seconds, stir and cook for a further 30 seconds if necessary to dissolve the gelatin. Stir in the grape juice and add the remaining water.

4- Divide the grapes between the four glasses and pour in the jelly. Chill in the refrigerator until set.
