One of the best herbs for cooking. a bushy, perennial herb, tarragon grows in sunny positions and in good, well drained soil to a height of 3 ft. It also grows well in pots and containers. Tarragon has slender, aromatic green leaves and produces small white - yellow flowers in late summer. Fresh tarragon can be added to salads and vegetable dishes.

Tarragon vinegar is made by infusing herbs in bottles of white wine vinegar and can be used in salad dressings.

Russian tarragon has larger, paler leaves, but  its taste is inferior to that of French tarragon.

    Uses: Tarragon is the perfect partner for chicken: poulet à lŽestragon is a French dish. It can also be used to add flavor to egg and fish dishes and to make sauces, such as tartar sauce.

    Medicinal: Tarragon is one of the "Dragon Herbs", said to have the power to heal the bites of mad dogs and the stings of venomous beasts. The root of tarragon was once used to cure toothache.
