Foeniculum vulgare
A hardy perennial with aromatic, feathery leaves which can be either green or bronze in color. From midsummer it produces bright yellow flowers. Fennel looks very similar to dill, but has a completely different flavor. It grows to a height of 5-6 ft and prefers a well drained soil and plenty of sun.
Uses: Fennel is an important culinary herb and its sweet aniseed flavor is a good partner for fish and vegetables dishes. Either the leaves or seeds can be used, Chopped leaves can be scattered over salads or new potatoes and the seeds add flavor to baking
Medicinal: Fennel is said to be useful in treating eye complaints and strengthening sight; an infusion of fennel leaves and seeds will relieve tired eyes. Fennel is said to provide strength and courage and promote longevity.
Legends: In medieval times fennel was hung on doors on Midsummer´s Eve to ward off evil spirits.
