A hardy deciduous shrub or tree. There are two varieties - the European elder grows to a height of 22 ft, while the smaller, shrubbier American variety reaches a height of 12 ft. Its creamy white flowers bloom in early summer and produce a beautiful scent, while its berries ripen by the end of summer and are often eaten by birds. The elder can be found growing wild in many places, so flowers and berries can often be gathered on country walks.

    Uses: The elder has may culinary uses. Elder flowers can be made into wine with a flavor similar to that of the muscatel grape or a delicious champagne. The flowers can also be added to fruit dishes, made into cordial or sorbets and ice creams. The berries can also be made into wine or be used in jam-making.

      Medicinal: Medicinally, elder has been used to treat many illnesses, including inflammations of the mouth, epilepsy and croup.
